Recipe of the Week: Lemon Shrimp with Garlic and Herbs with Cilantro Lime Rice

INGREDIENTS

  • 2 cups cooked rice
  • 2 tablespoons pine nuts
  • 2 tablespoons chopped fresh cilantro leaves
  • 2 tablespoons butter, melted
  • Juice of 1/2 lime

INSTRUCTIONS

  • In a large bowl, combine rice, pine nuts, cilantro, butter and lime juice.
  • Serve immediately.
